Activity of lactic acid bacteria bacteriocins isolated from Kazakh national meat product Khazy

17 cultures of lactic acid bacteria were isolated and identificated from Kazakh national meat product Khazy. Strains which posses bacteriocinogenic activity were defined. Two ways of supernatants neutralization were used for definition of bacteriocin activity by turbidimetric method. Two strains bacteriocinogenic activity to S.aureus growth in nutrient broth was determined.References
